A little while ago, I wrote a post about Meatless Monday. I have been trying to adopt this day into my schedule so I decided to share what my meatless Mondays look like.
Today, I got a late start on the day because I woke up with a killer migraine. Way to welcome my week ;). Anyway, do not so much pay attention to the times, they may seem late and random. I eat every 3 hours regardless of what time it is. So, if I wake up at 7, I eat at 7, 10,1, 4,& 7. That’s actually pretty close to what it is usually like for me.
9AM– Fruit Parfait and Slim Chai Tea. In case you are wondering, I do not normally eat my breakfast in such a beautiful glass, I just thought you might be able to see what was in it better. Although I quite liked it. It looks a bit a like dessert, and was so yummy I’m tempted to in fact have it for dessert tonight.
- Plain nonfat Greek yogurt
- Omega Blast Granola
- Honey Drizzled on top
12PM- For a snack I had veggies, cottage cheese and slim chai tea. I forgot to take my vitamins and pomegranate juice with breakfast so I added them here.
2:45 PM– I ate just a little before my 3 hour mark for two reasons. I was pretty hungry from my workout and secondly, I was headed to the grocery store. I know better than to go to the grocery store on an empty stomach. I made my Chocolate peanut butter protein drink and added 1/2 cup spinach. I was walking to Sprouts and “Yes” I had it in this little to go cup. It is from the Pantages Theater where we saw Phantom of the Opera.
5:45 PM– This was my favorite meal of the day! I looked last week for a good vegetarian recipe to make for today and we LOVED this one. Read my Stacked Vegetable Enchilada Recipe to find out how to make this on your own.
8:15 PM– While watching a movie with Steve, I had a big chamomile tea, 100 calorie kettle corn, and half a pear.
