Good Morning! How many of you are jumping on board and doing Meatless Mondays?? I am sorry that I didn’t post the last two Mondays. We had family in town and last week was Steve’s Half Birthday and the Ellen Degeneres Show. Moving on.. Here is what I had today.
8AM– Protein Drink. Vegan protein, almond milk, spinach, peanut butter, and banana. I LOVE!
11AM– Berries, Plain Nonfat greek yogurt with honey drizzled on it and green tea.
2:30PM– This was a little late but good. I had a green drink (not pictured). It was juice from was celery, parsley, kale, spinach, apple, cabbage, and lemon. YUM! haha! Not amazing, but part of my meatless Monday is to have a meat free day, but it is also a day for me to really cleanse and give my body a vegetable boost. With this lovely drink I had a yummy Kashi blueberry waffle with fresh blueberries on it.
5:30PM– So excited to finally eat this. It took nearly 2 hours to make but was worth it! These are quinoa stuffed peppers. I will put the recipe up today. The recipe makes 8 which was great because they are so good left over.
8PM– Of course I had a little treat while we were decorating our pumpkins. I love rice cripy treats.
