I can’t believe it is already Monday. I look forward to this day, but it seems to come too fast. Before we know it, the month of October will be gone and we will be on to Thanksgiving and Christmas. For me, it seems like once October hits, the year is pretty much over. The last three months are usually so fast I wake up January of a new year and still wonder what happened to the last half of the previous one. I am going to be sure to hit pause for a little bit each day to take it all in. I hope you can find time to do the same.
Here was my Monday this week
8AM– Loved having breakfast this morning because I got to spend some time with Steve. We had grapefruit, toast, green tea and pomegranate juice. I got this grapefruit from the Farmers Market this weekend and it was so good. My toast has a little honey drizzled on it because it was the last little bit of peanut butter. If you buy natural peanut butter, you know that no matter how well you stir it, the last bite always seems a little dry.
11AM– I worked out and was ready for lunch! This is my last day of left over vegetarian gumbo. I had a bowl without the rice and put a little Parmesan cheese on it.
2PM– I have had a new rule lately. When it comes to my mid-morning or mid-day snack, it needs to be vegetables. If I still want something else afterwards it’s ok, but I need to start with veggies. I usually am full by the time I eat them, but today I still had a little bowl of cereal after my greens. Don’t worry I didn’t eat all of this, I split the plate with Steve 🙂 All of these were from the Farmers Market as well.
5:30– This was my favorite meal today! I love home made Mexican food. I am not a fan of eating it out because it always seems to greasy and fatty. The smell of cilantro, red onions, and tomatoes instantly made me excited. Tonight I made vegetarian tostadas and spicy mango salsa. I will post the recipe tomorrow because they were good!
7:30– Even though dinner was totally satisfying, I wanted a little something sweet. Unfortunately for me, I don’t have to look very far for it. Thanks to my little baker husband, we have some kind of treat on hand most of the time. It really tests my will power. Tonight, I had two of Steve’s famous chocolate peanut butter cookies.
My question for today is… Would you consider eggs meat? Steve and I had a conversation about it this morning. I want to hear your thoughts, especially from all my vegetarian readers.
