I have been on a zucchini kick for the last few weeks and for valid reasons. A zucchini is super low in calories and saturated fat but doesn’t come without nutrients. They are very high in fiber, protein, and vitamins A, B, and C. I cook with them often and LOVE that they are available year round.
They are pretty mild in flavor when baking them into breads and muffins which I like because I can add them in for nutrients without my family really noticing. This week I am going to share just a few of the recipes I have been making lately with zucchini.
