I love Mexican food, and I love salads. That’s why this is a dish I love. I mix up the ingredients a little based on time and what I have in the fridge. Here is the one I made last night.
1 package lean ground turkey (jenny-O makes one that is taco seasoned that’s what I use)
Sharp Cheddar Cheese
Light Sour Cream
Cook meat in saucepan on low-medium heat until cooked through.
Chop all ingredients
Start with a big spread of lettuce on your plate. Top with a handful of each of your fresh ingredients. Use salsa as dressing and one small dollop of sour cream. Also a squeeze of fresh lime helps to add flavor and dressing without calories.
