I love making bread. However, I am always looking for healthy ways to still produce great taste. I made this zucchini bread this week and it was a hit!
- 5 egg whites
- 1 C. sugar
- 1/2 C Granulated Sugar substitute
- 1 C. unsweetened applesauce
- 1 tsp. vanilla
- 3 C. grated zucchini
- 1 C. all purpose flour
- 1 tsp. baking soda
- 1/2 tsp baking powder
- 1 tsp. salt
- 2 Tbsp. cinnamon
- 1/4 tsp. nutmeg
Combine eggs, sugar, Splenda, applesauce, and vanilla in bowl. Add zucchini and mix well. Sift together dry ingredients and add a little at a time, mixing together as you go. Pour into two loaf pans and bake at 325 for an hour or until knife inserted in the middle comes out clean.
My favorite part about making this break was my house smelling like Thanksgiving. The nutmeg was such a good flavor with this bread. I liked that I could enjoy a tasty bread without feeling guilty also. I think in the future I would do these maybe in muffin pans just for portion control. I also did not use as much sugar as the recipe called for. I used a little less sugar than this and it was plenty sweet. Next time I also will be doing 3 egg whites and 1 whole egg. I am a fan of some of that healthy egg yoke. Hope you enjoy! Please let me know if you try this and share it with your friends!
