Yum!! I know these “healthy snack/treats” are good when Steve tastes one and says, “mmmm .. where did you get this cookie recipe”? Hahah. These are so easy to make and taste amazing. I made them as a nice option to have around the house, but that might be a dangerous idea with how yummy these are.
- 1 cup quick cooking oats
- ½ cup natural creamy peanut butter
- ⅓ cup honey
- 1 cup coconut flakes
- ½ cup freshly ground flaxseed
- 1 tsp vanilla
- ½ cup mini chocolate chips (dark chocolate if available)
In a medium sized bowl, mix together all of the ingredients until well combined. Chill in the refrigerator for 30 minutes. Roll into balls. Store in an airtight container in the refrigerator for up to one week.
