Earlier this week we had dinner with some friends. I volunteered to bring dessert because there is a grapefruit cake recipe I have been dying to try. I don’t even know where it came from but it has been in my recipe book for the last year. With that being said, I still haven’t made it. When the day rolled around, I had way too much going on and needed to make something fast. As always, I like to make the healthy option of things and in most cases, if time isn’t of the essence, I can do this from scratch as well.
Since I was short on time, I used the next best thing, Trader Joe’s Reduced Guilt Brownie Mix. Have you ever tried it before? All you do is add non-fat vanilla yogurt and bake. So simple and SOOO yummy. While the brownies were baking, I washed and cut the fruit. For this I used strawberries, kiwi, banana, blueberries, and raspberries. When the brownies were cooked, I let them cool for 10 minutes and then placed fruit on top. You can do whatever design you want. This makes it a little creative and fun.
