I have been reading up on the positive effects that pomegranate juice has on your body. I am very interested in the way it reduces inflammation and joint pain. With that said, I tried this pomegranate chicken marinade and loved it! We eat so much chicken that I love to mix up the flavors. This is very bright and fresh tasting.
Two portions boneless skinless chicken breasts cut into thin slices
1/4 cup unsweetened Pomegranate juice
Juice of one lime or lemon
1 teaspoon extra virgin olive oil
2 garlic cloves minced
1/2 cup fresh chopped parsley
1/4 teaspoon salt
1/4 teaspoon black pepper
Mix all ingredients except chicken in a medium mixing bowl. Add chicken and coat well. Cover and place in fridge for 20 minutes.
Heat frying pan and coat with cooking spray. Cook chicken in pan for 7 or 8 min each side on medium heat, or until cooked through.
I added this on a Salad with Pom/Lime dressing and was so good.
