The day before we left town last week was a “clean out the fridge” day. I wasn’t going to buy anything new to rot in our fridge. Since I had so many vegetables I decided to throw them all together in a salad. I was surprised how good it was with the many different flavors so I thought I would share with you. Hope you enjoy!
Red Bell Pepper
Yellow Bell Pepper
Green Bell Pepper
Sugar Snap Peas
Fresh Shredded Parmesan Cheese
1 Teaspoon walnut oil
1 Tablespoon unsweetened pomegranate juice
Mixed together. If you want it a little more creamy you can add plain yogurt as well. I did not this time.
Make Pomegranate Chicken according to the recipe a previously posted. Then Chop, Slice and dice all ingredients and place over a nice bed of lettuce. Pour on dressing. ENJOY!
