I had brunch with a couple friends and was instantly in love with this salad. Since then I have been doing different versions of it and I’m never let down. It is one of my go to salads because it is so easy and also because Steve is always requesting it. Try it with the Montreal Chicken Kabobs for a great dinner.
- 1 container spring salad
- 1/2 red onion, thinly sliced
- 5-6 strawberries, washed, sliced
- handful of dried cranberries
- roasted slivered almonds (Trader Joes sells them like this and they are perfect for this)
- 3TB Poppy Seed dressing
Optional Toppings I have tried and loved. (If I am making the salad as a dinner in itself, I for sure add some protein)
- 1/2 cup cottage cheese
- hard boiled egg sliced
- grilled chicken, sliced
Place all ingredients in a big salad bowl and toss until dressing is thoroughly mixed.
