This has been a GO TO dish of mine for a couple of years now. I make a big batch of it every week and eat it throughout a few days. I have never enjoyed kale until this recipe. I hope you like it!
1 medium sweet potato
¾ tsp smoked paprika
1 large bunch of kale
2 cloves garlic, minced
2tbsp pine nuts
Peel and chop sweet potato. Drizzle with olive oil, add salt and paprika. Cook for 35-40 min on 375
In the last 15 minutes of the potatos cooking, wash and cut kale(cut out the rib). Heat large pan to med/high heat with olive oil and garlic. Add pine nuts and kale. Saute for about 5 min.
Add sweet potato to the pan and stir all together. The flavors kind of marinate in eachother if you let it sit for a few minutes. I like this hot when first made and also cold the next day. Enjoy!
